Ingredients

2 large eggs, boiled

1 ripe avocado  

Fresh lemon, squeezed

2 Tbsp flat leaf parsley, finely chopped 

Extra virgin olive oil  

Salt and pepper to taste 

2 slices Burgen Soy and Linseed bread, toasted 

Method

  1. Slice boiled eggs  
  2. In a bowl, mash avocado with a fork. Add a good squeeze of lemon and season with salt and pepper. 
  3. Toast low GI bread. 
  4. As soon as toast is ready, spread avocado on top of toast. Layer with sliced egg. 
  5. Drizzle with a little low extra virgin olive oil and garnish with parsley.
