Cover and set aside. Heat tsp olive oil in a non-stick pan. Add mushrooms and a pinch of salt and pepper. Cook until browned. Add balsamic vinegar and sauté for another minute to caramalise the mushrooms. Next add 1 tsp olive oil, cherry tomatoes, spinach and garlic. Sauté for a few minutes. Spinach will wilt. Add veggie mixture evenly to two bowls. Top with 2 eggs each and drizzle each with 2 tbsp hummus.
