Ingredients

½ cup coconut milk*

1 teaspoon matcha powder(high-quality)

1 teaspoon low GI honey

½ teaspoon vanilla essence

2 tablespoons chia seeds

1 tablespoon shredded coconut

Fresh berries (optional, for garnish)

Method

  1. In a bowl add the coconut milk, honey, matcha powder and vanilla. Use a whisk to combine well so that the match powder is completely dissolved.
  2. Add chai seeds and stir well, ensuring they are well combined.
  3. Cover and refrigerate for at least 5 hours or overnight. This will result in a pudding-like texture.
  4. When ready, give the pudding a stir. Add a little coconut milk if consistency is too thick.
  5. Spoon pudding into two serving bowls. Top with shredded coconut.
