Add olive oil to a large non-stick pan casserole pot and place on medium-high heat. Add the chicken thighs to the pan and sauté just until brown on each side. Set aside. Add the onion, garlic and capsicum to the pan and sauté over medium heat until the onion is tender. Next add mushrooms and cook another 3 minutes. Season with a pinch of salt and pepper. Add the chicken back to the pot along with the tomatoes, chicken stock, and oregano. Cover the pot and bring to a simmer. Turn heat to low and simmer for approximately 35-40 minutes, until the chicken is tender. Turn off heat and add chopped basil.
