Ingredients

½ cup chia seeds 

210ml coconut milk* 

¼ teaspoon vanilla extract 

2 Tablespoon Greek yoghurt, reduced fat 

1 teaspoon pure maple syrup  

½ cup smashed berries 

2 Tablespoon chopped roasted almonds 

 

Method

  1. In a bowl, add chia seeds, coconut milk, vanilla and maple syrup. Stir well.  
  2. Allow pudding to sit for 10 minutes, then stir again to break up any chia lumps. 
  3. Next, stir in the yoghurt. Cover and refrigerate overnight. Chia pudding will thicken. 
  4. Divide pudding into 2 serving bowls. Top with smashed berries and sprinkle with almonds.
