Ingredients

1 Lebanese cucumber, chopped  

1 spring onion, finely chopped   

½ green capsicum, chopped    

2 medium tomatoes, chopped  

½ red capsicum, chopped   

1 cup corn kernels (fresh, frozen or canned)  

180g cooked salmon, flaked  

½ avocado, chopped  

¼ cup coriander, chopped   

Dressing

1 Tbsp olive oil  

2 lemon or lime juice  

Sprinkling salt 

Sprinkling black pepper 

Method

  1. In a small bowl or jar, add olive oil, juice, salt and pepper. Mix or shake well. 
  2. In a large bowl add all ingredients (except dressing) and toss gently. 
  3. Drizzle over dressing and mix well to coat all the salad ingredients.
